Our First Field Trip...

This was after our 2 mile/400 step tour... Whew!

So sitting at Steak and Shake last night, my dear hubby mentions that all the blogs that he subscribes to have not posted in a while... That would include me.

I'm not sure where September went... but hello, good-bye! September was a learning month for me. It took the entire month to get used to this new life I have. You know, the wife, homeschool mom, church planter, children's director, teacher of Ruth, cute baby watcher life... But it's all coming together. Everything is falling into place. I'm learning that lesson that I have taught my boys for years, "Take one thing at a time"...

So here at Four Hills Christian Academy, we took our first field trip for the 2010-2011 school year... Mammoth Cave! It was really nice to see the boys reaction to everything we saw. It really is an amazing place. Cameron loves history, so he was on his best behavior. (He didn't want to miss a thing.)

We try to take some kind of field trip each month. It gives the boys something to look forward too, and gives this momma a break! It also gives us stuff to talk about... I usually have our entire year of field trips planned, but I'm still working on that! There are so many places that you can visit that are close to home!

So our October field trip has been planned... We're heading to the Newport Aquarium! I just hope I can blog again before this month ends. (You know, to keep my hubby happy...)

I haven't posted a recipe in a while... I haven't made anything in a while that didn't come out of box! But this one reminds me of cooler weather and maybe, just maybe I'll make some this week!

Stacy's Candied Pecans

1 egg white
1 tablespoon water
2 1/2 cups of Pecans
1/2 cup white sugar
1/2 cup brown sugar
1/2 teaspoon salt (I like sea salt)
1/2 teaspoon ground cinnamon

Preheat oven to 250 degrees F. Spray one baking sheet with non-stick spray. In a mixing bowl, whip together the egg white and water until frothy. (About one minute.) In a separate bowl, mix together sugars, salt, and cinnamon. Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet. Bake at 250 degrees F for 1 hour. Stir every 15 minutes. Cool completely on wax paper before packing them up to retain crunchiness. :)
