2 cups of instant rice
(Make rice as directed...I used 2 cups of chicken broth to make my rice.)
1 1/2 cups of cooked chicken
1 can of Cream of Chicken w/Herbs (Do not add water)
1 cup of diced deli ham
5-6 slices of Swiss Cheese
1/2 cup Panko bread crumbs
1 tablespoon of melted butter
Preheat oven to 350 degrees. Mix soup with chicken in bowl and set aside. Pour cooked rice into a baking dish. Use a little non-stick spray in baking dish. (I used an 8 x 11 1/2 dish) Next, top rice with chicken and soup mixture, smoothing it out. Add ham next, then Swiss cheese slices on top of ham. Mix the melted butter with the bread crumbs in a small bowl until the bread crumbs are moistened. Sprinkle the bread crumbs on top of cheese slices.
Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 7-8 minutes or until cheese is bubbly! :)
