
Homeschooling after a break is for the birds! We took a two week break, not bad. Although, getting back to normal has taken about two weeks!
It doesn't help that I am feeling a "little under the weather". No, let's just face it....I'm just plain sick! Thankfully, Caleb is at the age that he's starting to be self-taught. Not that I get to stay in bed all day, but it helps not being summoned every ten minutes.
Okay, I'll admit it. On days when my throat is sore. every muscle in my body aches, and I can't seen straight........I'd like to just send them off to school and have a day that I could stay in bed. That's not bad to say. That just happens to be one of the few cons about homeschooling. Believe me, there are many more pros than cons.
I don't feel like this every day....thank God!! So most days are great.
Caleb is finished for the day and Cameron is watching "Between the Lions". It 's a wonderful show about reading and phonics. It's nice for Cameron to learn from someone other than me or his brother. It also gives us both a break!
So because of Prayer Week at church and not feeling well, there hasn't been a lot cooking in my kitchen this week. Thankfully there's canned soup and Shop Rite had it on sale this week. And you know what?? I'm proud to say that we had french toast and sausage for dinner one night! It's okay to shake things up sometimes. It keeps my kids on their toes! My favorite time to eat breakfast foods are at night!
So here's my recipe for french toast. It's a no brainer, but I do add a unique twist.
Stacy's French Toast
6 slices of Pepperidge Farm Cinnamon Swirl Bread
2 eggs
1/4 cup of milk
1/4 cup of French Vanilla Coffee Creamer
1 tbs of sugar
2 tsp of cinnamon or when I have it, pumpkin pie spice
Mix eggs, milk, creamer, sugar, and cinnamon together until frothy.
Dip one piece of bread in at a time and saute in a pan with butter or a non-stick spray.
Grill until both sides are golden brown and serve with your favorite syrup. (Or if you're like me, what was on sale!)
Makes a great breakfast, lunch, or dinner! Now don't go calling the dentist. It's not a meal to serve daily, but it's nice to surprise the kiddos every once in a while and you won't even have to fight over whether or not there going to eat it!! That's an argument I'll pass on!
