Wow! I try so hard to be good at the "blogging thing", but as you can see.....I'm not. I have learned a few things though.
#1 - I learned that if you clean your entire classroom and get it organized that you and your children will be excited about going in there. There were days after a long week that we didn't clean it and get it ready for Monday, so that when Monday rolled around we were Like "Umm, let's do school in another room.
#2 - I learned that I shouldn't compare my children with any one else's children. There are some 8 year old homeschooled children that are just learning to read and some 8 year olds are doing freshmen Algebra.....my eight year old is just right and he's writing his name in cursive beautifully! :o)
#3 - I learned that I am so glad that I don't have to be bothered with "public school drama". I sat at Caleb's basketball practice and listened to two moms complain about the teacher, then the principle, and then how they wished their 5th graders didn't have 2 hours of homework per night! I'M FREE FROM ALL THAT!
And last but not least....#4 - I learned that sometimes you must put the boys to bed early when your husband is out eating wings with guys and you have the night to yourself!!! Then I learned that if you put 1/2 cup of peanut butter in your pancake batter (melt the peanut butter first in the microwave) and then make your pancakes the way you always would.......then here's the best part......Melt grape jam or jelly in the microwave and use that as your syrup!!
Yes, and I'm not embarrassed to say that I ate that for dinner while Matt was out with the guys and the boys went to bed early.....it was like a vacation!! :o)
So I can say that I'll try harder to blog more, but.........
Salsa Chicken
4 boneless skinless chicken breast
1 envelope of Taco Seasoning
1 16 oz jar of Black Bean and Corn Salsa (Wal-Mart "Sam's Choice" make a great one!)
3/4 cup of water (sometimes I omit the water and add more salsa, if I buy the 26 oz jar)
Put it all in a crockpot and cook those babies until the chicken falls apart and you can barely pick it up! I usally cook it 2 hours on high and about 3-4 hours on low.
Take out the chiken and finish breaking up the pieces with a fork and then put it back in the crockpot.
I make Mexican rice with mine or put it flour tortillas with cheese or sometimes I just eat it straight out of the crockpot! ~Enjoy!
