It's a Friday night, it's raining, and my hubby is in bed with a swollen uvula. (Don't ask...I have no idea.) I just heard "Danny Boy" and thanks to my high school choir, I knew every word...
I decided that I needed something sweet tonight. So I grabbed three ingredients... Yes, only three. Keep It Simple, Silly... (KISS) Here's what made the cut:
Cream cheese, cookies, and chocolate chips... That's it. Now lets make dessert... Allow your cream cheese to sit out to room temperature. And then place in a bowl and beat it... ♪♫ Just beat it...just beat it, beat it...Whoo! ♪♫ Sorry, I like to sing in kitchen.
Now, empty the Nutter Butter cookies into a Ziploc bag and crush, crush, crush!! It gets a little messy in that bag because of all the peanut butter filling, but just keep at it... Until it looks like sand. Then, pour into your bowl with the cream cheese and mix well. Just keep at it. Don't give up. It might look something like this:
Now, once it's mixed well...then it's time to roll!! I took a 1/2 tablespoon to use as a guide. Just scoop and roll... ♪♫ Rollin', rollin', rollin' on the river ♪♫
Oh, there I go again...
Now for my favorite part... The melted chocolate. Just take your chocolate chips, put in a bowl, and microwave - stirring in 15 seconds intervals. You'll get there. Patience, my friend...
Now, this next part is up to you... However you want to dip them, you do it! You can use a tooth pick, a fork, a spoon...whatever makes it easier on you. I used a wooden skewer. I used another wooden skewer to help pull the other one out. Then I made a little design on top with the end of the skewer. However you do it, as long as there is chocolate in the picture, you're fine.
Oh, look... while making these yummy little beauties, I noticed a rainbow outside. That's pretty...

Nutter Butter Balls
1 pkg Nutter Butter cookies 1 8oz package cream cheese (softened)
Chocolate Chips
Finely crush all cookies in a Ziploc bag and crush into a fine consistency. Beat the cream cheese in a bowl, then add the crushed cookies. Use the back of a large spoon to help mash the two together. Roll the mixture into balls using a 1/2 tablespoon as a scoop and place on a wax paper covered cookie sheet or plate. Melt chocolate chips then dip balls into chocolate, tap off extra and set aside on wax paper. Refrigerate and enjoy!
