Well, maybe "rotten" is a bit much... Let's just say they were very overripe. So much, that I was getting ready to pitch them in the trash. Then I remembered a recipe that I wanted to try...
Banana Chocolate Chip Cake
Sound good? Well, I was a little skeptical. Cake Mix, Egg, Chocolate Chips, and Bananas... That's it? No oil? No milk? No water? But it was a yucky, rainy day and I wanted to bake something. And if it didn't turn out, I was going to throw the bananas out anyway.
Oh, my! So, so yummy. I'm actually trying to type this as fast as I can so that I can go back into the kitchen for another piece.
Here's what I did - First, I split a cake mix. Cake mixes can be easily cut in half. I take a cake mix and dump it into a gallon size zip lock bag. (That makes it easier to measure.) Measure out 1 cup and 3/4 cup of the cake mix. You'll roughly have 1 cup and 3/4 cup left. Put the rest in your pantry for another small cake or 12 cupcakes*!!
Easy Banana Chocolate Chip Cake
Half of a Yellow Cake Mix (I used Pillsbury "Touch of Butter" Flavor)
1/2 cup of Chocolate Chips (Since there are not many ingredients, use the best chocolate.)
1 Egg
2 Overripe Bananas
Put the cake mix in a mixing bowl and add chocolate chips. Toss cake mix and chocolate chips together. In another bowl, mash the bananas, add the egg, and beat. Next, add the banana and egg mixture to the cake mix and stir until you can no longer see any dry cake mix. Pour batter into a greased and floured cake pan. (I used an 8-inch square cake pan.)
Bake at 350 degrees for 25 to 30 minutes. (Mine took 28 minutes)
As this cake was baking, the delicious aroma that was billowing through my house was promising. But then, when I took it out of the oven... It was love at first sight. (Hence the powered sugar heart that I decided to adorn it with.)
Lesson learned: I think I may let my bananas go "bad" more often!
*Here's the recipe I use when make making a small cake or 12 cupcakes.
1-3/4 cups mix from 18-ounce box of cake mix
2/3 cup liquid
1/4 cup oil
1 egg
Preheat oven to 350 degrees F. Spray an 8 inch square or round cake pan with nonstick baking spray containing flour and set aside. In medium bowl, combine cake mix, liquid, oil, and egg; mix until combined, then beat for 1 minute at medium speed. Pour into pan. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Let cool, then frost or dust with powdered sugar.
