"Two people are better off than one, for they can help each other succeed. If one person falls, the other can reach out and help.
But someone who falls alone is in real trouble."
~Ecclesiastes 4:9-10
This is very true. This verse applies to me in so many ways...marriage, parenting, ministry...almost any situation I can think of - two people are better off than one.
And it's so true when you talk about (drum roll, please...) getting healthy!! Our family (even Cameron) has decided that we're going to eat better and exercise. We have our little "gym" in the basement and the healthier eating is going well too! (We canceled our gym membership and we'll use that money to make better choices at the grocery!)
I can't imagine doing this alone. I need help. I need someone there that I can reach out to. I sure don't want to be the one in trouble when I fall alone.
And I will fall... We all do. I told Matt that I was tired of exercising and eating healthy. I even told him I wanted a big glass of milk and eat a whole sleeve of Dos-i-dos. (Can I get a witness?) But I didn't...
Now don't get me wrong... I don't deprive myself. I made dinner AND dessert for my parents and my sister's family last night. I ate...stopped before I felt full and even had a piece of cake! (Recipe to follow...)
I'm feeling great and I know teaching my family to exercise and eat healthy is important.
They say (and don't ask me who "they" are) that anything you can do for 21 straight days can become a habit. Good or bad... I hope that this just becomes part of who we are.
God gave me this body. Whether I'm here on earth for 1 year or 50, the Lord has called me to serve Him and to be His hands extended. I've got a job to do and I've had a few "concerns" this year with my health. I want to be the best healthiest wife, mom, and minister I can be!!
And I'm learning that I can still have a piece of chocolate cake every now and then!
Chocolate Fudgy Cake (No Eggs or Oil!!)
1 Box of Chocolate Cake
1 Small Box of Instant Chocolate Pudding
1 1/2 cups of Milk (I used Skim Milk and it turned out wonderfully.)
1 cup of Mini-Chocolate Chips
Preheat oven to 350 degrees. Pour milk and chocolate pudding mix in a bowl or mixer and and stir until combined. Slowly mix in the chocolate cake mix in with the pudding mix. In the end, this will be very thick. I used my mixer... I didn't try this by hand!
Pour batter into a 9X13 baking pan sprayed with non-stick cooking spray. Because this mixture is so thick, I used a spatula sprayed with cooking spray to spread it to the side of the pan to make sure it was even.
Then top with the chocolate chips and bake for 25-30 minutes. This cake is more like the consistency of a fudgy brownie and really, really good!!
*Please Note - This cake is originally known as a "Chocolate Dump Cake"... I'm not fond of that name and thought I'd class up the joint a bit! :)
